Recently, I have been trying to eat a bit healthier as I have been getting that sluggish feeling due to eating a tonne of chocolate, biscuits and chips (too many late night post night out chicken nuggets as well)!
So, I set out to buy a nice bag of cripsy salad and some dressing and decided that now was the time to attempt the healthier lifestyle. Luckily at my university (Nottingham Trent), we have a delightful fruit and veg man who sells all sorts for ridiculously cheap. I decided to turn my dinners just that little bit healthier and have some nice lunches instead of settling for cheese on toast and I thought I would share with you what I've made.
Now, I'm not Nigella or Jamie but I think, considering I'm living on a student budget, I've done pretty well and they're so easy to do.
So if you're a suffering student like I am and you want to be just that little bit more healthy, have a go at making one of these!
Lunch: Chicken and Bacon Caesar Salad (Cost about £5)
Pan fry the chicken in a little olive oil until brown and cooked
Add the bacon and fry when the chicken is half cooked
Once cooked, lay on a bed of Iceburg lettuce (or any lettuce but I like this one)
Drizzle with Caesar dressing
Dinner: Teriyaki Steak and New Potato Salad: (Cost about £8)
Fry the steak in a little olive oil until it is done to your preference
Add in about 2-3 tablespoons of Teriyaki sauce and heat
Boil the new potatoes until soft then drain and add butter
Lay all onto a bed of Iceburg lettuce
Dinner: Sea Bass with New Potatoes and Peas (Cost about £10)
Lay sea bass onto foil and season with salt and pepper (or you could use a butter)
Wrap the foil up and cook for about 20 minutes
Boil the new potatoes until soft
Cook the peas
So there are a few of my "healthy" lunches and dinners, and by the way, they were actually all so delicious :)
